Simple, fresh, healthy, tasty and beautiful. When the weather warms up, we look forward to having more salads in the house. This salad makes you feel like you have done something good for yourself. Great for detoxing; especially with the lemon, watercress and parsley, they help with digestion.
1 bunch asparagus, quartered
200 g sugar snap peas (0 g protein in pod)
1 bunch watercress
1/2 bunch mint
1/2 bunch continental parsley
1 handful sprouts or micro greens, such as purple radish
2 Tbsp. lemon juice
4 Tbsp. extra virgin olive oil
Wash all ingredients.
Blanch or Steam the asparagus and sugar snap peas until the colour changes to bright green. (The salad can also be eaten raw.)
Drain and rinse under cold water.
Combine with picked greens in a large bowl.
Pour over the dressing and toss to combine.
– To add protein add your choice of feta or seeds, such as pumpkin or sunflower.
– For an additional low protein addition, add 1 avocado (2 g protein).
